Define the term convection?


Convection:

When a fluid, such as air or a liquid, is heated and moved away from the source, the particles of the air or liquid absorbs heat. Particles of hot surface expands, becomes less dense, and rises. Such type of heat transfer is called convection.

This mechanisms is used in cooking while using convection oven. In convection oven, fans circulate hot air around food thus the food cook faster than a non-conventional oven.
